This recipe is a slightly modified brownie recipe from the Bulletproof Blog for Keto Avocado Brownies, which I've made before. But personally, I think this variation is a lot yummier. It uses less avocado so you don't taste it as much (avocado in brownies always seemed a little weird to me when eating...) and you can get creative with the brownie fluff by adding your own things into it.
I also enjoy the fact that, by doing it this way, everything is kept RAW so you can fully utilize all the nutrients and minerals found in these great ingredients. I mean, if you're going to pay a little more for the organic, raw, pasture-raised stuff, don't you want to take advantage of the extra nutrient boost? Cooking it defeats the purpose, I think.
You can also roll it into little balls, making truffles, and roll it around some crushed organic nuts or something. Have fun with it! My version is listed below.
INGREDIENTS:
2-3oz of dark chocolate (85%+)
2 tablespoons grass-fed butter
1 medium organic avocado
2 pasture-raised eggs
1/4 cup Lakanto (or sweetener of choice! Use something low carb, or don't. if you don't care about the carb content, raw honey would be awesome!)
1/2 cup organic coconut flour
1/2 cup organic raw cacao powder
2 tablespoons grass-fed collagen (for texture)
1/2 teaspoon baking soda
1/4 Celtic sea salt
optional: 1/2 teaspoon vanilla (I never add this, it doesn't make a taste difference, in my opinion)
Step 1: Melt the dark chocolate and grass-fed butter on LOW heat in a saucepan. Don't let it boil or cook too long or it'll separate. Just melt it enough to where it's....well....melted
Step 2: As that's melting, get your food processor (could work in a blender too probably!) and add in all the other ingredients starting with the avocado! Pulse and mix for about 30-45 seconds
Step 3: Add in melted butter/chocolate and then let is mix for AT LEAST 60 seconds
Step 4: Put in a dish and chill!
You can keep this is the fridge which I do, or freeze it for a super dense texture.

It's been a while since I made a recipe video! So I hope you enjoyed this one. I make this weekly at the moment, it's so good and I love that it has very minimal sugar alcohols. You could even do this with no sweetener if you want!
