PERFECT Bulletproof Ice Cream Recipe (Without An Ice Cream Maker)

The essential 2 tips in this video (if you're not using an ice cream maker) are to use XYLITOL! & a couple tablespoons of grass-fed WHEY PROTEIN!

Every time I use any other sweetener (I've tried Lakanto, erythritol, swerve, etc) with this recipe the texture comes out terrible - hard as a rock. Xylitol works for some reason.

The grass-fed whey protein gives it a Ben & Jerry's like scooping consistency which makes it perfect to eat straight from the freezer.

The conversions from grams to measurements are listed below with the recipes!

CLASSIC RECIPE (all credit to Dave Asprey & Bulletproof - I did not create this recipe)

  • 4 whole eggs (pastured of course)

  • 4 yolks (in addition to the whole eggs above)

  • 2 tsp vanilla (I use Vanillamax)

  • 1 gram vitamin C (ascorbic acid) or 10 drops apple cider vinegar or lime juice to taste

  • 100 grams (7 tbs) grass-fed butter

  • 100 grams (7tbs) coconut oil

  • 50 grams (3tbs + 2tsp) XCT oil (important for consistency)

  • 80 grams (5.5tbs) xylitol (or more to taste – you can add up to 160 grams if you want)

  • Blend it all up!

  • Gently blend in 2tbsps grass-fed whey protein at the end

CHOCOLATE BP ICE CREAM

  • 4 whole eggs (pastured of course)

  • 4 yolks (in addition to the whole eggs above)

  • 2 tsp vanilla (I use Vanillamax)

  • 1 gram vitamin C (ascorbic acid) or 10 drops apple cider vinegar or lime juice to taste

  • 100 grams (7 tbs) grass-fed butter

  • 50 grams (3tbs + 2tsp) coconut oil

  • 50 grams (3tbs + 2tsp) melted cacao butter

  • 50 grams (3tbs + 2tsp) XCT oil (important for consistency)

  • 80 grams (5.5tbs) xylitol (or more to taste – you can add up to 160 grams if you want)

  • 1/3 - 1/2 cup raw cacao powder (to taste)

  • Blend it all up!

  • Gently blend in 2tbsps grass-fed whey protein at the end

WHITE CHOCOLATE BP ICE CREAM

  • 4 whole eggs (pastured of course)

  • 4 yolks (in addition to the whole eggs above)

  • 2 tsp vanilla (I use Vanillamax)

  • 1 gram vitamin C (ascorbic acid) or 10 drops apple cider vinegar or lime juice to taste

  • 100 grams (7 tbs) grass-fed butter

  • 50 grams (3tbs + 2tsp) coconut oil

  • 50 grams (3tbs + 2tsp) melted cacao butter
